Pasta with Creamy Walnut Sauce is a luscious and nutty pasta made from walnuts, caramelized onion, and a splash of non-dairy milk. The walnuts add a nice natural bitterness to offset the creaminess of the sauce.

For the Pasta
- 12 ounces pasta (such as penne or fusilli) For the Caramelized Onions
- 1/2 large onion, sliced
- 1 tablespoon extra-virgin olive oil For the Creamy Walnut Sauce
- 1 cup raw walnuts
- 33333333/100000000 cup extra-virgin olive oil
- 1/4 cup non-dairy milk
- 1/2 teaspoon dried thyme
- 3/4 teaspoon salt
- 1/4 teaspoon garlic
- 1/2 teaspoon freshly ground black pepper
Instructions
- Step 1: Let's make the caramelized onions. Heat 1 tablespoon of olive oil in a wide frying pan over medium heat. Once hot, add the sliced onion and a pinch of salt. Cook until caramelized and golden brown, about 20 to 25 minutes. Add splashes of water as needed to prevent sticking or burning.
- Step 2: Once the onions are caramelized, measure out 1/3 cup of the caramelized onions for the sauce recipe. Store any extra caramelized onions in the refrigerator.
- Step 3: Combine the Creamy Walnut Sauce ingredients, including the 1/3 cup of caramelized onions, in a food processor. Blend until very smooth, scraping down the sides as needed. Set the sauce aside.
- Step 4: Cook your pasta, reserving some of the hot pasta water in a mug before draining.
- Step 5: Pour in some of the sauce and a splash of the water to the drained pasta. We use around 1 cup each of walnut sauce and pasta water. Stir, adding more sauce and/or pasta water as needed to get a very creamy consistency.
- Serve: Plate and enjoy.
