Celery Radish Apple Salad

This salad has a sweet, savory, and super crunchy blend of celery, radishes, apples, and walnuts tossed in a simple olive oil vinaigrette. No lettuce needed. The end result is a bright, refreshing, and super healthy dish. Try a matchstick-style cut for an elegant presentation, or a very small dice as a time-saver. This is wonderful served alongside roasted your favorite protein and/or grains.

Salad
- 4 stalks celery, thinly sliced
- 6 radishes
- 1 tart apple (such as granny smith)
- 1/2 cup fresh parsley, chopped
- 3/4 cup walnuts, roughly chopped Vinaigrette
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- 1 1/2 tablespoons lemon juice
- 1/4 teaspoon salt
Instructions
- Step 1: Use a sharp knife to chop/slice the apple & radishes into small pieces. Matchstick-style chopping makes for a fun presentation, but it does take more time.
- Step 2: Whisk together the vinaigrette ingredients. Set aside.
- Step 3: Add all salad ingredients together in a large mixing bowl. Pour the vinaigrette over the top and stir to coat. If making this as a meal prep, don't skip adding the vinaigrette. It actually helps to marinate the flavors together.
- Serve: Divide onto plates and enjoy.
