Greek Chicken Kebabs

Chicken breasts get a juicy upgrade when marinated in a blend of yogurt, olive oil, and Greek-inspired spices. Skewer the marinated chicken onto skewers with a few veggies and then grill until golden brown. It's an easy and healthy crowdpleaser for outdoor picnics or weekday dinners. I use a combination of bell pepper and zucchini here, but red onion would also be a welcome addition.

Chicken
- 2 boneless and skinless chicken breasts
- 1 red bell pepper, diced into 1 inch pieces
- 1/2 zucchini, sliced into 1/2 inch rounds or half moons.
- cooking oil
- salt and pepper, to taste Marinade
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon dried dill
- 1/2 teaspoon dried mint
- 1/2 teaspoon dried garlic
- 2 tablespoons olive oil
- 1 tablespoon plain Greek yogurt
Instructions
- Step 1: Rinse and pat the chicken breast dry. Dice the chicken into 1 inch cubes.
- Step 2: Whisk together all of the marinade ingredients until smooth. Place the marinade in a resealable bag or glass container. Add the chicken breasts to the bag/container and ensure the chicken is evenly coated in the marinade. Refrigerate the chicken for at least 2 hours to overnight. You can also freeze the chicken directly in a freezer-safe bag, up to 2 weeks.
- Step 3: Remove the marinated chicken from its marinade, discarding any leftover marinade. Season the chicken with salt and pepper.
- Step 4: Thread the chicken onto skewers, alternating with the vegetables. Do not pack the skewers too tightly (Note: You'll need about 6 to 8 skewers). If using wooden skewers on the grill, be sure to soak them in water for at least 30 minutes prior to using.
- Step 5: Preheat a grill or wide frying pan to medium-high heat. Lightly grease the grill or pan with some cooking oil. Once hot, add the chicken kebabs and cook until golden brown and cooked through, turning the skewers occasionally. This will take about 10 to 15 minutes. Transfer the cooked skewers to a platter.
- Serve: Enjoy your juicy kebabs with a squeeze of lemon and an optional side of Cucumber Yogurt Sauce.
