Potato Chip Crusted Chicken

Potato Chip Crusted Chicken! Dredge chicken cutlets in egg wash, coat with the crushed chips, then bake until crispy-tender. Any chip will work here: sweet potato chips, plantain, or even pretzels. Paleo and gluten-free option.

Shopping List
- 2 boneless skinless chicken breasts
- 3 cups chips of choice (Note 1)
- 1 egg
- 1 tablespoon flax meal
- pinch of cayenne pepper
Instructions
- Step 1: Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
- Step 2: Rinse and pat the chicken dry. Slice each breast in half vertically to make 4 thinner cutlets.
- Step 3: Pulse the chips in a food processor until they are the size of coarse breadcrumbs. You should have around 1 heaping cup of crumbs. Stir in the flax and a little cayenne. Pour the crumbs onto a plate. Note: No processor? You can also crush the chips in a resealable bag with a rolling pin or wine bottle.
- Step 3: Break the egg into a bowl and beat with a fork. Set aside.
- Step 4: Create an assembly line with the chicken, egg wash, and crumbs. First, dredge the cutlets in the egg wash. Let the excess egg drip off the chicken, back into the bowl. Next, coat the chicken on all sides with the crumbs. Press in any crumb gaps with your hands. Place the chicken on the lined baking sheet and repeat this process with all the remaining chicken. Add more crumbs if needed.
- Step 5: Bake for 22 to 25 minutes, flipping over halfway through the cooking time.
- Serve: Enjoy!

Note 1: Regular potato chips, sweet potato chips, plantain chips, and pretzels will all work here.
