The perfect summertime quinoa salad recipe filled with fluffy quinoa, avocado, watercress, fruit of choice, and bell pepper in a simple vinaigrette. Easy to make and positively refreshing.

For the Quinoa Salad
- 2 1/2 cups cooked quinoa, cooled to room temperature
- 2 handfuls watercress (or arugula)
- 1/2 red bell pepper, diced into small pieces
- 2 scallions, chopped (white and light green parts only)
- 1 large avocado, diced
- 1 cup summer fruit of choice (such as peach, mango, apricot, or plums)
- 1 tablespoon fresh parsley or basil, chopped (optional) For the Vinaigrette
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon honey or agave syrup
- 1 tablespoon lemon juice
- 2 teaspoons champagne vinegar (or another mild vinegar)
- salt and pepper, to taste
Instructions
- Step 1: Whisk together all vinaigrette ingredients in a small bowl. Set aside.
- Step 2: Combine all of the quinoa salad ingredients in a bowl. Pour in all of the vinaigrette and toss to coat.
- Serve: Enjoy at room temperature or chilled.
