Easy Vegan Truffles

3-Ingredient chocolate fudge truffles that everyone will love. Store in the freezer to satisfy any chocolate craving.

Shopping List
- 4 ounces semi-sweet chocolate chips (or chopped chocolate bar)
- 4 tablespoons full-fat coconut milk (or other non-dairy milk)
- 1 tablespoon smooth almond butter (or other nut butter)
- 1 pinch of cinnamon (optional)
- cacao powder (optional, for rolling)
Instructions
- Step 1: Melt the chocolate, milk, and cinnamon in a microwavable container or double boiler. If using a microwave, heat the mixture in 15 second intervals and stir between each interval to prevent burning. Once melted, stir in the nut butter until smooth.
- Step 2: Freezer for several hours to harden. Once solid, use a spoon to scoop out the chocolate and roll with your hands into small truffles. The heat from your hands will start to melt the chocolate, so work quickly or in intervals if needed. Place the rolled truffles on a sheet of parchment and freeze to harden for at least 30 minutes.
- Step 3: Roll the truffles in a little cacao powder, if desired (recommended).
- Serve: Store the truffles in the freezer and enjoy chilled.
