Double Chocolate Energy Balls

We love these healthy chocolate energy balls made with dates, seeds, protein powder, cacao, and a hint of cinnamon. And lots of chocolate chips (there's never too many really). You'll need a good food processor to make these, but if you have one, they're a breeze to put together.

Shopping List
- 1 1/2 cups medjool dates, pitted
- 1 cup sunflower seeds
- 6 tablespoons vegan protein powder (Note 1)
- 6 tablespoons cacao powder
- 2 tablespoons mini chocolate chips (plus extra for optional rolling)
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
Instructions
- Step 1: Combine all ingredients in a heavy-duty food processor. Pulse until the mixture has broken down into a large, uniformed ball. Depending on the machine, this will take 1 to 3 minutes. Scrape down the sides of the bowl as needed. If the machine feels warm, pause until it cools.
- Step 2: Place the dough on a cutting board and use your hands to roll out ping-pong sized balls.
- Step 3: Want a crunchy chocolate outside? Stick or roll extra chocolate chips over the balls. We like to use our hands to individually stick the mini chocolate chips into the balls. It's time-consuming, but extra delicious.
- Serve: Store in the freezer. Pull out of the freezer a few minutes before eating to soften. Enjoy.
Recipe Notes
Note 1: We like to use a pea-based protein for this. Otherwise, use an equal amount of additional sunflower seeds.
