Pumpkin Pie Pudding

No Bake Pumpkin Pudding that tastes like a rich pumpkin pie with layers of nutty crumble. Made with only pumpkin puree, nuts, dates, and warming spices.

For the Pudding
- 1 (15 ounce) can unsweetened pumpkin puree
- 3/4 cup walnuts
- 1/2 cup pecans
- 8 medjool dates, pitted
- 2 teaspoons pumpkin pie spice (we like this one)
- 1/8 teaspoon ground cloves (optional) For the Crumble
- 1 cup pecans and/or walnuts
- 2 medjool dates, pitted
Instructions
- Step 1: Pulse the crumble ingredients in a food processor until it forms coarse crumbs, like tiny pebbles. Transfer to a bowl.
- Step 2: Combine all of the pudding ingredients in the emptied food processor. Blend until very smooth, about 1 to 2 minutes. Scrape down the sides as needed.
- Step 3: Scoop one layer of the pumpkin blend into your container of choice, about 1 inch high. Sprinkle a thin layer of the crumbs on top. Repeat this process, layering as you go, until all the filling and crumbs are used up.
- Serve: Grab a spoon and enjoy chilled or at room temperature with optional whipped cream on top. Keep in mind this is quite rich, so a little goes a long way.
