Easy Green Soup

A creamy and easy green soup made with only 5 simple ingredients. Perfect alongside some crusty bread or a sandwich.

Shopping List
- 3 to 4 cups salted vegetable broth
- 5 large zucchini, chopped
- 3 handfuls leafy greens (such as spinach, chard, or dandelion greens)
- 1 brown onion, diced
- 2 tablespoons olive oil
- salt and pepper, to taste
Instructions
- Step 1: Heat the oil over medium-high heat in a pot. Add the onion and cook until soft, about 5 minutes, stirring frequently. Add the zucchini, greens of choice, and the broth. Bring to a boil over medium-high heat.
- Step 2: Once boiling, lower the temperature to medium and cook until the zucchini becomes very soft, about 20 to 25 minutes.
- Serve: Allow soup to cool, then puree until silky smooth. Add more broth as needed to thin. Taste and add salt and pepper as desired. Enjoy.
