Shopping List
- 12 ounces poached chicken (or rotisserie chicken, Note 1)
- 2 scallions, chopped
- 2 tablespoons raisins (or currants or chopped dried apricot)
- 1/4 cup slivered almonds
- 1/4 cup mayonnaise (or plain Greek yogurt)
- 1 tablespoon curry powder
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 tablespoon honey
- salt and pepper, to taste
Instructions
- Step 1: Toast the almonds in a dry pan over medium heat until golden and fragrant, about 2 minutes. Shake the pan often to avoid burning. Set aside.
- Step 2: Dice the cooled chicken into bite-sized pieces. Place it in a mixing bowl.
- Step 3: Add all of the remaining ingredients, including the toasted almonds, and stir everything together until creamy. Refrigerate until ready to use.
- Serve: Serve this curried chicken salad on its own, over greens, or stuffed in a sandwich. Enjoy.
Recipe Notes
Note 1: This should make about 1 heaping cups of cooked, diced chicken. Cooked chicken thighs are also delicious in this.
