Spinach with Feta

This Spinach with Feta is a delicious healthy side dish ready in under 10 minutes.

- 8 ounces raw baby spinach
- 2 tablespoons olive oil
- 1 garlic clove, minced (optional)
- 1/4 cup feta cheese (dairy or non-dairy)
- 2 scallions, sliced (white and light green parts only)
- 1/16 teaspoon nutmeg
Instructions
- Step 1: Heat the olive oil in a frying pan over medium-high heat. Add the garlic and cook for 30 seconds, or until fragrant.
- Step 2: Add the spinach and cook, stirring regularly, until wilted. This will take about 3 to 4 minutes.
- Step 3: Add the feta, scallions, and nutmeg. Season with salt and pepper. Cook for 1 more minute, until the cheese is melting.
- Serve: Enjoy! This is great with fish, chicken, and/or a plate of hummus and pita.
