Crispy Ground Beef Tacos

Crispy Ground Beef Tacos that are stuffed with seasoned beef, veggies, and cheese. Oven baked (not fried) until they get a great crunch in every bite. Fun to eat, super satisfying, and easy to make. Serve with a simple salad for a great meal.

For the Beef
- 8 ounces lean ground beef
- 1/2 tablespoon taco seasoning (store-bought or homemade) For the Rest
- 4 to 6 taco-sized corn tortillas
- 1/2 bell pepper or onion, sliced
- shredded mozzarella cheese, to taste (dairy or non-dairy)
- avocado oil, to taste Toppings
- sour cream (dairy or non-dairy), cilantro, and hot sauce
Instructions
- Step 1: Heat a frying pan over medium-high heat and add a little splash of olive oil. Add the sliced bell pepper or onion. Cook, stirring only every minute or so, for 4 to 5 minutes. It will be ready when the vegetables soft but still a bit crisp. Transfer to a bowl.
- Step 2: Put the empty pan back over medium high heat and add the ground beef. Cook for 5 to 6 minutes, or until no longer pink inside. Use the side of the spatula to break the meat into small pieces as it cooks.
- Step 3: Once the meat has cooked, drain any released liquid and then put it back in the pan with the taco seasoning and a good splash of water. Season with salt as desired. Cook the meat over medium heat until the water has cooked off, about 1 to 2 minutes. Set aside.
- Step 4: Preheat the oven to 425 degrees Fahrenheit. Warm the tortillas in a microwave (or oven) for a minute, until they are pliable.
- Step 5: Place the warm tortillas on a baking sheet and coat the tortilla generously in avocado oil on both sides.
- Step 6: Fill half of each tortilla with some of the beef and a little pepper or onion mix. Top with a sprinkling of cheese and fold the tortillas in half. Repeat. Note: try not to overstuff the tortillas.
- Step 7: Bake the tacos for 8 minutes, then flip and bake for another 8 minutes. They will be ready when they are golden brown and crispy.
- Serve: Top with sour cream, cilantro, and hot sauce. Enjoy immediately for the best crunch.
Recipe Notes
Note 1: These will also work with grain-free cassava tortillas. Just make sure to heat the tortillas until they are very pliable before stuffing, to avoid tearing.
