Cooked Dandelion Greens

This cooked dandelion greens recipe is an easy, tasty, and ultra healthy vegetable side. Just boil the greens, then sauté them with garlic and olive oil for a few minutes. Boiling helps mellow the natural bitterness and softens them for a texture similar to spinach with a bit more flavor.

  • 1 large bunch dandelion greens (Note 1)
  • 2 garlic cloves, peeled and left whole
  • 1 tablespoon extra virgin olive oil
  • salt and red pepper flakes, to taste
  • lemon juice, to taste (optional)

Instructions
  1. Step 1: Bring a large pot of salted water to a boil.
  2. Step 2: Meanwhile, clean the greens of any dirt and chop them into large pieces. You should have around 6 handfuls of chopped greens.
  3. Step 3: Boil the greens for 8 to 10 minutes, or until they are very soft and dark green in color. Drain well.
  4. Step 4: Heat the olive oil and whole garlic cloves in a frying pan over medium heat. Toast the garlic for a few minutes. Add the dandelion greens and saute them in the olive oil for 1 to 2 minutes. Season with salt and red pepper flakes.
  5. Serve: Plate your greens, squeeze some lemon juice on top, and enjoy.

Recipe Notes

Note 1: Look for greens that are vibrant green. Avoid onves that may be yellowed or slimy.
