Arugula Salad with Blueberries and Cashews

The easiest arugula salad with plump blueberries and roasted cashews in a simple lemon and olive oil dressing. Healthy, simple, and perfect with a side of avocado toast.

Shopping List
- 2 handfuls arugula
- 1/2 cup blueberries
- 1/4 cup roasted salted cashews, roughly chopped
- 1 tablespoon good quality extra virgin olive oil
- 1/2 tablespoon lemon juice
- 1/8 teaspoon sea salt
Instructions
- Step 1: Stir together the olive oil, lemon, and sea salt in a small bowl or jar. Set aside.
- Step 2: Combine the arugula, blueberries, and cashews in a serving bowl. Drizzle with the dressing and toss to combine. If your handfuls were on the larger side, you may need to add a little more olive oil and lemon juice.
- Serve: Enjoy! We love this with a side of smoked salmon on crunchy avocado toast.
