Roasted bell pepper wedges. Perfect for adding to bowls and salads as an easy vegetable side dish for meal prep.

- 2 bell peppers (any color)
- 1 tablespoon olive oil
- salt, to taste
Instructions
- Step 1: Preheat the oven to 420 degrees Fahrenheit.
- Step 2: Slice the bell peppers into wedges, about 6 wedges per pepper.
- Step 3: Spread the bell pepper on a baking sheet and toss with the olive oil and a little salt. Roast for 16 to 18 minutes, turning over halfway through the cooking time. The pepper should be browned and a bit soft.
- Serve: Enjoy! This is great in burrito bowls.
