Cumin Roasted Sweet Potatoes

Ultra tender roasted sweet potatoes tossed in cumin, paprika, coriander, cayenne, and a hint of cinnamon. The perfect, comforting side dish.

Shopping List
- 2 pounds sweet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon EACH cumin, paprika, and coriander
- 1/8 teaspoon EACH cayenne and cinnamon
- salt, to taste
Instructions
- Step 1: Preheat the oven to 375 degrees Fahrenheit.
- Step 2: Peel and chop the sweet potatoes into large 2-inch chunks. Place on a baking sheet and toss with the olive oil and spices. Season with salt and roast for 35 to 40 minutes, or until very soft. Stir halfway through the cooking time.
- Serve: Enjoy. This is great with a side of avocado crema.
