Fish with Bell Pepper Salsa

Easy pan-cooked fish topped with a refreshing and crunchy salsa of bell pepper, tomato, onion, and jalapeño on top. It's healthy, tasty, and on the table in under 20 minutes.

For the Fish
- 3 (5 ounce) fish fillets of choice (such as halibut or salmon)
- olive oil, to taste
- salt and pepper, to taste For the Salsa
- 1/4 green bell pepper, finely diced
- 1/4 white onion, finely diced
- 1 medium vine-on tomato, cored and finely diced
- 1/2 jalapeño, seeded and finely chopped
- 2 tablespoons cilantro, chopped
- 1/2 lime
- 1/2 tablespoon olive oil
- salt, to taste
Instructions
- Step 1: Finely dice the bell pepper, onion, and tomato. Add to a bowl with the chopped jalapeño, cilantro, lime juice, and olive oil. Season well with salt. Stir to combine and refrigerate until ready to use.
- Step 2: Heat a skillet over medium-high heat. Rub some olive oil all over the fish fillet and season with salt and pepper. Add the seasoned fish to the hot pan and cook for 4 to 5 minutes per side, depending on the thickness. A thin fillet 1/2-inch fillet may only need 2-3 minutes per side. Do not move the fish while it cooks.
- Serve: Transfer the cooked fish onto plates, drizzle with olive oil, and top with plenty of the salsa. Enjoy.
