Mustard Greens with Tomato Sauce

- 1 large bunch mustard greens (about 8 ounces)
- 1 1/4 cups cherry tomatoes, quartered (175 grams)
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon salt
- red pepper flakes, to taste
Instructions
- Step 1: Let's start with the tomato sauce. Heat a large frying pan over medium heat. Add the tomatoes and cook until softened, stirring frequently and squishing the tomatoes down with a fork. This should take about 10 to 15 minutes. If the tomatoes are browning too quickly, lower the heat.
- Step 2: Once soft and sauce-like, turn off the heat. Add the olive oil and salt. Set aside, you should have about 1/2 cup of tomato sauce.
- Step 3: Bring a large pot of generously salted water to a boil.
- Step 4: Thoroughly rinse the greens to remove any dirt or debris trapped in the leaves. Roughly chop the leaves.
- Step 5: Place the chopped greens in the boiling water and cook, covered, for about 9 minutes. The greens will be ready when they're fork tender. Drain and toss in the frying pan with the tomato sauce until warmed through. Add red pepper flakes, to taste.
- Serve: Transfer to a serving bowl and top with an extra drizzle of olive oil. This is great with Baked Fish with Potato Crust.
