Pasta with Fish

A simple Italian pasta recipe tossed with fresh fish, tomatoes, olive oil, and a hint of white wine. Perfect for weeknights.

Shopping List
- 8 ounces firm white fish (such as swordfish, halibut, or mahi-mahi)
- 6 ounces pasta (such as penne or farfalle)
- 1 cup cherry tomatoes
- 2 garlic cloves, sliced
- 3 tablespoons extra-virgin olive oil
- 2 heaping tablespoons white wine
- salt and red pepper flakes, to taste
- chopped parsley, for topping
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente. Drain.
- Step 2: Dice the fish into 1-inch pieces.
- Step 3: While the pasta cooks, heat the olive oil in a skillet over medium heat. Add the sliced garlic and cook for 1 to 2 minutes. If the garlic starts to brown too quickly, lower the heat.
- Step 4: Add the diced fish and whole cherry tomatoes. Cook for 2 to 3 more minutes, stirring occasionally.
- Step 5: Pour in the wine and 1/4 teaspoon salt. Simmer for 3 minutes.
- Serve: Toss the cooked pasta with the sauce, sprinkle with parsley, and red pepper flakes. Enjoy.
