Peanut Pretzel Stuffed Date Truffles

Sweet and salty stuffed date truffles made with five simple ingredients – dates, chocolate, pretzels, peanut butter, and coconut oil. Delicious and easy!

- 8 pitted medjool dates
- 33333333/100000000 cup chocolate chips
- 1/4 cup pretzels, chopped
- 3 tablespoons peanut butter (or almond or sunflower butter)
- 1 tablespoon coconut oil
- flakey sea salt, for topping (optional)
Instructions
- Step 1: Cut a slit lengthwise into each date and remove the pit. Carefully open the date, like a book.
- Step 2: Stir together the peanut butter and the chopped pretzels in a small bowl. Spoon a heaping teaspoon of the sticky mixture into each pitted date. Transfer the dates to the freezer for at least 1 hour, or until the filling has hardened.
- Step 3: Melt the chocolate chips and coconut oil together in a small microwaveable bowl or double boiler until pourable. If using a microwave, heat the chocolate in 20 to 30 second increments to avoid burning.
- Step 4: Dipping time! Remove the chilled dates from the freezer and dunk in the melted chocolate, coating all sides. I like to do this by placing the date on a fork, lowering it into the chocolate, and then spooning chocolate over the top. Transfer the coated dates onto a wire cooling rack with parchment paper place beneath to catch any drips. Transfer the dates back to the freezer until fully hardened.
- Serve: Carefully remove the dates from the cooling rack (use a small knife if the chocolate is stuck) and transfer to an airtight container. Store in the freezer until ready to eat.
