Easy Burger and Broccolini Dinner

No complicated recipe here: pan-fried burgers over buttery rice and roasted broccolini. Simple and super satisfying.

- 4 beef burger patties (about 6 to 8 ounces each)
- 1 pound broccolini
- 1 cup rice, uncooked
- sliced cheese, optional (dairy or non-dairy)
- avocado, optional
- olive oil and butter (dairy or non-dairy)
Instructions
- Step 1: Cook or defrost rice according to package directions. You will need about 3/4 cup of rice per person.
- Step 2: Preheat the oven to 410 degrees Fahrenheit.
- Step 3: If the broccolini are very thick, slice them in half lengthwise until each stalk is about the width of a pinky finger. Spread the broccolini on a baking sheet and toss with a drizzle of olive oil. Season with salt and pepper. Roast for 8 to 10 minutes.
- Step 4: Heat a skillet or flat griddle until it’s very hot. Add the burgers, sprinkle with a pinch of salt and let them sit and sizzle for a few minutes. Flip and top with optional cheese. Leave them undisturbed for another few minutes, until your desired doneness is reached.
- Serve: Build your plates with the warm rice, broccolini, burgers, and optional avocado. Season everything with salt, pepper, and a dab of butter on the hot rice. Enjoy!
