Spinach Salad with Poppy Dressing

This Spinach Salad with Poppy Dressing is topped with crispy bacon, cheese, eggs, cranberries, tomatoes, and a drizzle of sweet poppy dressing. Inspired by the Costco Spinach Salad.

For the Salad
- 3 handfuls spinach
- 4 hard boiled eggs, chopped
- 4 slices bacon
- 1/2 cup cherry tomatoes, halved
- 1/4 cup dried cranberries
- 1/4 cup shredded mozzarella cheese
- 3 tablespoons shallot, finely sliced
- Poppy Dressing (store-bought or homemade)
Instructions
- Step 1: If making the Poppy Dressing yourself, do so now. Refrigerate until ready to use.
- Step 2: To hard boil the eggs, bring a saucepan of water to a boil. Gently place the eggs in the water with a spoon. Continue to boil for 9 minutes. Remove the eggs with a slotted spoon, rinse under cold water, and place into a bowl of ice water until cooled. Peel and chop.
- Step 3: Cook the bacon in a skillet over medium-high heat until crispy on both sides. Transfer to a plate and chop.
- Step 4: Toss the spinach in a little splash of the Poppy Dressing and transfer to a serving plate(s). Top the salad with the eggs, bacon, tomatoes, cranberries, cheese, and shallot.
- Serve: Enjoy with extra dressing on the side.
