Kale Caesar Salad with Crispy Chickpeas! Massaged kale, crunchy chickpeas, and avocado with creamy vegan caesar dressing. So good, and so good for you.

Shopping List
- 5 ounces kale leaves, stems removed (about 6 handfuls)
- 2 cups crispy chickpeas (store-bought or homemade)
- 1 to 2 avocados, diced
- 1 batch vegan caesar dressing (or use store-bought)
- 1/2 tablespoon olive oil
- 1/2 tablespoon lemon juice
Instructions
- Step 1: If making the homemade caesar dressing, do so now. Refrigerate.
- Step 2: Tear the hard stems from the kale and place the leaves in a mixing bowl. Use your hand to massage the kale with the lemon juice and olive oil until softened, about 15 seconds.
- Step 3: Toss the massaged kale with some caesar dressing, to your taste preference. Divide the dressed kale into bowls and top with diced avocado and crispy chickpeas.
- Serve: Enjoy with extra caesar on the side.
