Crumble Topping
- 1/2 cup almonds
- 1 medjool date, pitted
- pinch of salt Filling
- 3 apples (such as macintosh, cortland, or golden delicious), divided
- 1/4 cup raisins
- 2 medjool dates, pitted
- 1/4 teaspoon cinnamon
- 1/4 teaspoon lemon juice
Instructions
- Step 1: Soak the raisins in warm water for 10 minutes. Drain thoroughly.
- Step 2: Meanwhile, add the topping ingredients to a food processor and pulse until it creates a roughly chopped consistency, like a finely pebbled texture. Remove from the processor and set aside.
- Step 3: Peel and core the apples. Roughly chop 1 of the apples and place it in the emptied food processor. Add the drained raisins, 2 dates, 1/4 teaspoon cinnamon, and 1/4 teaspoon lemon juice. Blend until a thick paste is formed.
- Step 4: Chop the remaining 2 apples into bite-sized pieces. Place the chopped apples and filling paste into a bowl and stir until the chopped apples are well coated.
- Serve: Divide the filling into small personal-sized ramekins or a larger serving dish. Top the filling evenly with the almond crumble. Refrigerate or eat immediately. Enjoy.
