Sabzi Feta Platter

Sabzi refers to fresh herbs, which are key to this Persian-inspired salad. Fresh herbs are served alongside juicy tomatoes, cucumber, grapes, walnuts, feta, and flatbread for an amazingly refreshing appetizer or light meal. Stuff your small wraps with plenty of herbs and enjoy.

Shopping List
- 2 large handfuls of herbs (such as cilantro, basil, mint, tarragon, and/or marjoram, Note 2)
- 1 lavash flatbread (Note 3)
- 3 ounces feta cheese block (or plant-based feta)
- 1 handful red grapes
- 1 large roma tomato
- 1/2 cup walnuts
- 1 cup English or Persian cucumber, diced
Instructions
- Step 1: Remove the herbs from their hard stems, there is no need to chop them. Combine the herbs together in the center of the serving plate.
- Step 2: Arrange the feta, grapes, tomato, walnuts, and cucumber around the herbs. Slice the lavash into bite-sized pieces and add to the plate.
- Serve: Make little lavash wraps with a little bit of everything and enjoy.
Recipe Notes
Note 1: This recipe is inspired by the Lavash Restaurant of San Francisco. Note 2: At a minimum, use a combination of cilantro, mint, and basil. The total amount should equal about 20 grams of mixed herbs. Note 3: Lavash is ideal here, but can also be substituted with 2 pita breads if needed.
