Sweet Potato and Artichoke Salad

Roasted sweet potatoes, juicy artichoke hearts, tomato, and avocado piled over greens with olive oil and lemon juice. Easy, healthy, and delicious. Enjoy with your favorite protein to make it a meal.

- 1 large sweet potato
- 4 ounces grilled marinated artichoke hearts (drained)
- 1 avocado, diced
- 1 tomato, diced
- 2 handfuls arugula
- 1 tablespoon olive oil (plus more for dressing)
- lemon, salt, and pepper
Instructions
- Step 1: Preheat the oven to 400 degrees Fahrenheit.
- Step 2: Dice the sweet potato into 1-inch pieces. Place on a baking sheet and toss with 1 tablespoon of olive oil. Season with salt and pepper. Roast for 30 to 35 minutes, stirring halfway through the cooking time.
- Step 3: Toss the arugula with a little olive oil, lemon juice, and salt. Top with the roasted sweet potatoes, tomato, avocado, and artichoke hearts. Drizzle with a little olive oil and lemon, to taste.
- Serve: Drizzle with a little olive oil and lemon, to taste. Enjoy.
