Cilantro Bitchin' Sauce Bowls

Roasted cauliflower, sweet potato, greens, creamy cilantro dip, and your favorite protein all in one big macro bowl! Just 1 sheet pan and plenty of store-bought shortcut options.

Shopping List
- 4 servings protein of choice (such as salmon or veggie burgers)
- 1 pound sweet potato or kabocha squash
- 1/2 head cauliflower
- 2 cups cooked brown rice (or 2 avocados, sliced)
- 4 handfuls arugula or spring mix
- 2 tablespoons olive oil
- sauerkraut, to taste
- Cilantro Bitchin' Sauce, to taste (store-bought or homemade copycat)
Instructions
- Step 1: Preheat the oven to 400 degrees Fahrenheit.
- Step 2: Dice the sweet potato or kabocha into bite-sized pieces, there should be about 4 cups worth. Next, chop the cauliflower into large florets.
- Step 3: Spread the cauliflower and sweet potato pieces on a baking sheet (or two) and toss with the olive oil. Season with salt and pepper. Roast for 20 to 25 minutes, or until fork tender. Stir halfway through cooking.
- Step 4: Meanwhile, cook the protein and/or prepare the cilantro sauce if needed.
- Serve: Assembly time! Divide each bowl with the greens, warm roasted vegetables, protein, and grains or avocado. Top with sauerkraut, a generous dollop of cilantro sauce, and a drizzle of olive oil and optional lemon.

Note 1: Want to save more time? Try using frozen microwaveable packs of rice, pre-cooked protein, and store-bought Cilantro Bitchin' Sauce.
