Roasted Japanese Sweet Potatoes

Perfectly roasted Japanese sweet potatoes made with only 3 ingredients and the best mouth-feel. They're such a crowd-pleasing side dish.

Shopping List
  • 2 extra large Japanese sweet potatoes (about 16 to 20 ounces each)
  • 2 teaspoons extra virgin olive oil
  • salt and pepper, to taste

Instructions
  1. Step 1: Preheat the oven to 400°F.
  2. Step 2: Scrub the sweet potatoes clean. Slice the potatoes in half lengthwise and then slice each half in half vertically (essentially quartering the potatoes). If your potato pieces are especially large, you can slice them hasselback-style by cutting several thick slices into the potato that do not go all the way through to the bottom.
  3. Step 3: Place the potatoes on a sheet pan and rub the potatoes quarters all over with the olive oil and season with salt and pepper. Place them flat side facing down. Roast the potatoes for 35 to 40 minutes. Flip the potatoes over halfway through the cooking time.
  4. Serve: Take a bite and enjoy!
