Peanut Chocolate Chip Energy Bites

These peanut butter chocolate chip energy bites are the perfect easy post workout or dinnertime snack. Made with oats, peanut butter, flax meal, and honey or maple syrup.

Shopping List
- 1 cup gluten free oats
- 1/2 cup runny peanut butter (or almond or cashew butter)
- 1/2 cup chocolate chips
- 1/4 cup shredded unsweetened coconut (optional)
- 1/4 cup flax meal
- 3 tablespoons honey, maple syrup, or date syrup
- 3 tablespoons protein powder (or additional oats)
- 2 tablespoons CBD-infused honey (or regular honey or syrup, Note 1)
Instructions
- Step 1: Place the oats in a food processor and pulse until it becomes a flour. Add all of the remaining ingredients, except the chocolate chips, in the food processor with the oat flour.
- Step 2: Mix/pulse to combine. The result should be a thick, dough-like mixture. If too dry to stick together between your fingers, add a bit more peanut butter or honey.
- Step 3: Fold in the chocolate chips and roll the mixture into balls or press into a pan and cut into squares or bars. Freeze until ready to eat.
- Serve: Remove the energy bites from the freezer 5 to 10 minutes before eating to soften.
Recipe Notes
Note 1: Keep in mind that most CBD-infused honey brands will give a unique, earthy flavor. Don't have any CBD-infused honey? Substitute with an equal amount of additional regular honey, maple syrup, or date syrup.
