Tik-Tok Vegan Feta Pasta

A plant-based spin on the viral Tik Tok baked feta pasta recipe, originally made by a popular Finnish blogger. No feta? Hummus makes a tasty alternative.

Shopping List
- 8 ounces gluten-free or pasta (try bean-based for extra protein)
- 10 ounces cherry tomatoes (about 1 pint)
- 4 ounces plant-based feta (we use this one, Note 1)
- 3 tablespoons olive oil
- 2 tablespoons hummus (optional, for extra creaminess)
- 3 garlic cloves, halved
- salt and red pepper flakes, to taste
- basil, for topping
Instructions
- Step 1: Preheat the oven to 400 degrees Fahrenheit.
- Step 2: Toss together the whole tomatoes, garlic and 2 tablespoons of the olive oil in a casserole dish. Place the feta cheese block in the center of the tomatoes, top with the remaining 1 tablespoon of olive oil, and sprinkle with salt and red pepper flakes. Bake for 30 to 40 minutes, or until the the tomatoes have softened and the feta looks melted or very soft.
- Step 3: Meanwhile, bring a large pot of salted water to a boil. Cook the pasta until al dente. Before draining, reserve 1/2 cup of the starchy pasta water. Drain and toss lightly with olive oil to prevent sticking.
- Step 4: Use a fork to mash the feta, garlic, and tomatoes until a chunky sauce is formed. Mix the sauce with the cooked pasta, basil leaves, and optional hummus, until it's all very creamy. Add a splash of the reserved pasta water, as needed.
- Serve: Divide into bowls and enjoy.
Recipe Notes
Note 1: Can't find plant-based feta? Try substituting with an equal amount of hummus (dolloped into a small mound in the center of the casserole dish) and follow the recipe as indicated. If using this substitution, we recommend a rice-based gluten-free pasta for best flavor.
