Herbed Fish en Papillote

The classic and easy way to bake fish in parchment paper packets. A sprig of rosemary and a sprinkle of thyme flavors the fish as it cooks.

- 1 (4 to 6 ounce) fish fillet (such as sole, halibut, or cod)
- 1/2 tablespoon olive oil
- 1 sprig fresh rosemary
- 1/4 teaspoon dried thyme
- salt and pepper, to taste
Instructions
- Step 1: Preheat oven to 375 degrees Fahrenheit.
- Step 2: Place the fish fillet in the center of a large square of parchment paper. Season the fish the thyme, salt, and pepper. Drizzle with oil and top with a sprig of rosemary.
- Step 3: Fold up the 2 long edges of the parchment to meet in the center directly above fish. Fold them down together until it reaches the fish, crimping to seal. We like to use a metal paperclip to hold the seal in place. Now fold the two short sides down underneath the fish, crimping to seal (seal the packet well, so that the steam will not escape).
- Step 4: Place on a rimmed baking sheet and bake until the fish is just cooked through. About 8 minutes for thin fillets like sole, or 15 minutes for thicker halibut fillets.
- Serve: Carefully unwrap the packets, remove the rosemary sprig, and transfer to plates. Enjoy.
