No-Bake Freezer Protein Cookies

These jumbo protein 'cookies' are an easy vegan treat, made mainly with protein powder and water. Keep in mind however, that these will not taste like your average cookie - they're more intended to be a protein-rich option without all the additives and added sugars of many other pre-packaged options. The best way to eat these is a few minutes after coming out of the freezer, after that they will begin to soften.

Cookie
- 3 tablespoons vegan protein powder of choice (Note 1)
- 3 tablespoons water
- 1 tablespoon coconut flour
- 1 tablespoon smooth nut butter (such as peanut, almond, or cashew)
- 1/2 tablespoon plant-based butter, melted
- 1/2 tablespoon agave syrup or maple syrup
- 1/4 teaspoon vanilla extract Toppings (optional)
- sprinkles, chocolate chips, etc
Instructions
- Step 1: Stir together all ingredients, except the toppings, in a small bowl until smooth. It will make a thick batter. Sprinkle your desired toppings over the top.
- Step 2: Freeze the batter for 10 to 15 minutes, or until firm enough to shape into a round cookie. Place the 'cookie' on a piece of parchment paper and freeze until hardened.
- Serve: When ready to eat, set the cookie out for a few minutes before eating. The warmer the cookie gets, the less it will be able to hold its shape. Enjoy.
