Applesauce Oat Bread (Gluten-Free)

This easy vegan blender bread has a soft, fluffy texture and plenty of warming apple cinnamon vibes. Not too sweet, and perfect topped with almond butter and jelly or a generous smear of plant-based butter. Just blend, bake, and enjoy!

Shopping List
- 2 cups rolled oats (can use gluten-free)
- 1 1/4 cups unsweetened applesauce
- 1/2 cup coconut sugar
- 33333333/100000000 cup ground flax seed meal
- 33333333/100000000 cup non-dairy milk
- 1/4 cup safflower oil
- 1/4 cup runny almond butter (or other nut butter of choice)
- 1/2 tablespoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
Instructions
- Step 1: Preheat the oven to 375°F. Line 1 (8 in. x 4 in.) bread loaf pan with cut parchment paper.
- Step 2: Combine all of the bread ingredients in a food processor or high-powered blender until smooth and the oats have broken down.
- Step 3: Pour the batter into the bread pan and sprinkle with extra oats if desired. Bake for 45 to 50 minutes, or until firm. Cool on a wire rack at least 30 minutes before handling. Remove from the pan and refrigerate to firm.
- Serve: Slice your bread and enjoy. This is bread is especially great topped with almond butter or warm plant-based butter. Freezes very well.
