2-Ingredient Celery Root Purée

Celery root has a mild flavor similar to celery, but a starchier mouthfeel like a rutabaga or swede. The texture makes it ideal to puree, perfect as a side dish to fish or other purees. Peeling celery root can be a little messy, but it is well worth the minimal effort.

- 1 pound celery root (about 2 medium bulbs)
- 2 tablespoons extra virgin olive oil
- salt and pepper, to taste
Instructions
- Step 1: Cut off the top stem and peel the celery root to remove all of the coarse brown peel. You might need to chop the bulb into smaller pieces to reach those hard-to-peel areas. Chop the peeled celery root into a 1 inch dice.
- Step 2: Steam or boil the celery root for 8 to 10 minutes, or until the pieces are fork-tender. Drain.
- Step 3: Place the cooked celery root in a food processor with salt, pepper, the 2 tablespoons of olive oil, and 3 tablespoons of water. Puree the celery root until it is super smooth. Add more water, 1 tablespoon at a time, to make it looser. Taste and adjust seasonings as desired.
- Serve: Transfer the puree to a serving bowl and top with an optional drizzle of olive oil. Enjoy.
