Easy Tuna Sandwich

This is one of those very east, back-pocket recipes that you can dress up or dress down as you like. All you need is canned tuna, something creamy (think mayonnaise, avocado, or hummus), a bit of mustard. Pile it over your favorite bread, serve it with some sweet potato chips, and you have a satisfying meal in under 10 minutes.

Tuna Salad
- 1 (5 ounce) can tuna fish, packed in oil or water (Note 1)
- 3 tablespoons mayonnaise, hummus, or 1/4 avocado
- 1/2 tablespoon mustard of choice
- 1/2 tablespoon lemon juice (optional)
- salt and pepper, to taste
- sliced bread of choice Optional Add-Ins
- chopped celery, red onion, pickles, and/or capers
Instructions
- Step 1: Drain the tuna very well. In a medium bowl, mix the tuna, mayonnaise, mustard, optional lemon juice, salt, and pepper. Mash it all together with a fork until your preferred texture is reached. Taste and adjust seasonings as needed.
- Serve: Divide the tuna mixture onto the toasted or un-toasted bread. Enjoy open faced style or top with another slice of bread. Enjoy.

Note 1: Aim to use a canned tuna fish that does not contain broth or preservatives in its ingredients. The only ingredients needed should be tuna, water or olive oil, and optional salt.
