Blackened Green Beans

These charred green beans are crisp, smokey, and supremely easy to make. The trick (or rather, technique) is to use a very hot cast iron pan and to not stir the green beans while cooking. Only a few minutes sear and they're perfectly cooked.

Shopping List
- 8 ounces green beans, any variety
- 1 tablespoon olive oil
- 1/2 garlic clove, finely chopped
- salt and pepper, to taste
Instructions
- Step 1: Heat a large cast-iron pan over medium-high heat. Meanwhile, toss the green beans in 1/2 tablespoon of oil.
- Step 2: Once sizzling hot, add the green beans in a single layer (you may need to do several batches). Spread the green beans evenly over the pan, then cover with a lid for 3 minutes. Do not stir. After 3 minutes, shake the pan and continue cooking for 1 more minute. The green beans will be smokey and charred.
- Step 3: Add the remaining oil, garlic, salt, and pepper to the pan with the green beans. Give it all a good shake and continue cooking for a few more seconds.
- Serve: Slide the green beans onto a plate and serve. This is delicious alongside Mashed Cauliflower.
