- 2 cups Rice Chex cereal (we use this one)
- 1 cup pretzels
- 1 cup nuts of choice (we use almonds and pecans, 100 grams total)
- 1/4 cup white or dark chocolate chips
- 1/4 cup dried cranberries
- 1/4 cup melted coconut oil or grass-fed butter
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon or pumpkin pie spice
Instructions
- Step 1: Preheat the oven to 275°F.
- Step 2: Stir together the Chex cereal, pretzels, nuts, oil, maple syrup, vanilla, and cinnamon/pie spice in a mixing bowl until evenly coated (reserve the chocolate and cranberries for later). Spread the mixture evenly onto a lined baking sheet. Bake the mixture for 35 to 45 minutes, gently stirring every 15 minutes.
- Step 3: Transfer the baked Chex mix from the baking sheet to a bowl to cool. Once fully cooled, add the chocolate chips and cranberries. Stir.
- Serve: Grab and handful and enjoy. Prepared Chex mix can be stored in an airtight container on the counter.
