Crisp-Seared Salmon

This is more of a cooking technique than a recipe, but whatever it is - it's delicious. Lightly season you salmon fillets, sear them in a hot pan (don't fiddle with it), and then finish it off in the oven. Ready in under 15 minutes.

Shopping List
- 1 pound salmon, cut into 3 fillets
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon garlic powder
- salt and black pepper, to taste
Instructions
- Step 1: Rub the oil all over the salmon fillets, especially the top. Season the fish with the garlic, salt, and pepper.
- Step 2: Preheat the oven to 450 degrees Fahrenheit. Preheat an oven-proof skillet (such as cast-iron) over medium-high heat until a drop of water on the surface sizzles immediately. The initial heat of the pan will help create a nice crust. Add the salmon, skin side facing up. Cook for 4 minutes - do not move the fish during this time.
- Step 3: Carefully flip the fish so that the skin is now facing down. Cook for another 3 to 4 minutes, depending on the height of the fish.
- Step 4: Transfer the oven-proof pan into the preheated oven and finish cooking the fish for 2 to 3 more minutes. Note: If your fish is quite thin (under 1 inch), skip this step entirely.
- Serve: Transfer the fish to a plate and enjoy. This is great over salads or alongside simple roasted vegetables.
