Almond Butter and Peanut Energy Balls

If you like the idea of peanut rice krispies - then you'll love this healthy energy bite recipe. Under 15 minutes to make and sure to satisfy any sweet tooth.

Shopping List
- 1/2 cup + 2 tablespoons crispy rice cereal (divided)
- 3 tablespoons smooth almond butter
- 3 large medjool dates, pitted
- 3 tablespoons salted peanuts
- 1 1/2 tablespoons coconut butter, softened (Note 1)
- 1/2 teaspoon vanilla extract
Instructions
- Step 1: Place .5 cup of puffed rice, the almond butter, dates, peanuts, coconut butter, and vanilla in a food processor. Reserve the remaining 2 tablespoons of puffed rice.
- Step 2: Pulse the mixture until it well broken down and a thick paste is formed, about 30 seconds. Remove the lid and add in the remaining 2 tablespoons of puffed rice. Pulse a few times, just to incorporate the puffed rice into the dough (it should still have some small pieces visible).
- Step 3: Use your hands to roll the dough into small balls, each about the size of a ping-pong ball. Store the energy balls in the freezer.
- Serve: When ready to eat, take the energy balls out of the freezer and let them come to room temperature for a few minutes. They'll be perfectly chilled and chewy.
Recipe Notes
Note 1: Coconut butter is not interchangeable with coconut oil. Coconut butter is made from the meat of the coconut, not the oil. Our favorite is this brand. Alternatively, you can make a homemade coconut butter by blending unsweetened shredded coconut in a food processor or high powdered blender until it becomes a super smooth butter consistency. Add a little coconut oil if needed to help break it down.
